This is an adapted version of a tabbouleh salad I made recently. Made with some brown rice instead of the bulgar wheat so it makes this version a gluten free option.
We ate it with some pan fried fish but it can be served as a side salad or included on a wrap. Either way I’m sure you will enjoy it.

- 1 carrot – grated
- 2 tomatoes – diced
- 1 cup ready cooked brown rice
- 2 cups lightly packed parsley – cut up finely
- 2 tablespoons salad dressing or 1 tablespoon olive oil, 1 tablespoon lemon juice
- Place all into a bowl mix together well, then serve as desired
