Cauliflower Fried Rice Recipe

Sometimes you just feel like a light version of fried rice and this cauliflower fried rice recipe is just perfect for that!

It’s gluten free, it’s suitable for people following a low carb, paleo or primal diet and this delicious fried rice tastes sooo good. 

It makes a very satisfying meal, and the basic recipe can be changed to suit your preferences or to use up what you have left in the fridge, so feel free to get creative with it.

 

Cauliflower Fried Rice
 
Serves: 2
Ingredients
  • 1 red bell pepper (capsicum) – sliced finely
  • 2-3 strips bacon or 4 pieces rindless shortcut bacon – sliced finely
  • 1 spring onion – sliced finely
  • 1 bunch bok choy or tatsoy – sliced finely (you can also use spinach)
  • 2 eggs
  • 3-4 cups cauliflower rice, readily cooked, see recipe link below
  • Capful of tamari (optional)
  • Oil for cooking
Instructions
  1. Heat a small amount of oil in a pan, fry off your eggs, busting the yolk and flipping half way through the process to cook it through
  2. Remove from pan
  3. Add bacon to the pan and cook for 1-2 minutes
  4. Add bell pepper and cook for another 1-2 minute, stirring occasionally
  5. Whilst that is cooking, cut your eggs into strips ready to add to the pan
  6. Next add your cauliflower rice to the pan and a capful of tamari, and stir to combine, cooking for a further 1-2 minutes, stirring occasionally
  7. Add bokchoy and egg, allow to cook for a further 1-2 minutes then you’re done!
  8. Serve and sprinkle the dish with your freshly cut spring onions

OPTIONS

Storage – keep in the fridge for a maximum of 2 days

Reheat – simply reheat the dish in a pan or in the microwave making it the perfect dish to take for lunch

Additions – you can replace the vegetables used here with any veggies of your choice, or simply use what’s available to you. It’s such a versatile dish and will taste good no matter what you put in it

    Tired of the same old fried rice? Mix it up and make kimchi bokkeumbap, or kimchi fried rice, for dinner tonight!
