Nori Salad & Tuna Wrap

Traditionally we might use a flat bread to make a lunch wrap we can take to work. But I find nori seaweed makes a great alternative for those wanting to cut down on the carbs or if you follow a grain free or paleo diet. Nori is full of trace minerals, iodine and other valuable nutrients too, which means you get your superfood for lunch with this great salad and tuna wrap combo.

Give it a try, I’m sure you will love it.

Serves: 2
Ingredients
  • 4 pieces nori seaweed
  • 1 x 185g (6.5oz) tin tuna – drained
  • 1 avocado
  • 1 piece sweet potato – optional
  • 1 carrot – grated
  • 1 tomato – sliced
  • 1/4 cut freshly choped fennel – finely chopped
  • shredded lettuce
  • 2 pieces foil
Instructions
  1. Lay the nori on top of the foil
  2. Top with avocado and then layer with the other ingredients
  3. Roll up into a wrap and secure with the foil
  4. Note: You can use any salad vegetables you have on hand – get creative :)

Feel free to get creative and add any type of ingredients you like. Wrap it up and you’ve got a great, healthy lunch.

    looks great! Does the sweet potato need to be prepared any way first?

      Good pick up there Cel!

      Cooked sweet potato is best to use of course. I used a slices of a baked sweet potato for this but you could pan fry it, boil it, steam it and it would work just the same.

      I hope you try it because it really is delicious :)

      Yes, the nori may be a little mosit but if you’ve ever had sushi I don’t mind it like that. This also wroks well with chicken or beef instead of tuna. Hope you enjoy it Lauren :)
