I remember the first time I discovered the amazing time saving crockpot, otherwise known as a slow cooker.

I was visiting a friends house and there was a lovely aroma that hit you right at the front door.

But I knew she had just walked in the door from work herself? I also knew she lived alone?

So I stood there a bit confused about how this aroma was wofting out at us when there was no one there to cook dinner?!

So she walked me on into her kitchen and introduced me to her crockpot. She raved and raved about how convenient it was to be able to cook dinner while you were at work.

Yes, I’d imagine it would be. She had me hooked.

Since then I’ve dsicovered many different crockpot meals and during winter the crockpot gets used on a regular basis, especially on super busy days.

I love that you can just throw everything in, then set it and forget it.

So today I’d like to share 3 easy crockpot chicken recipes you can try. One thing I should mention though, it’s always hard to get a great picture of a crockpot meal :)

1. Crockpot Chicken Laksa - a family favorite!

Laksa is a coconut milk based Asian soup. Sometimes it can be spicy but because this one uses pumpkin it is sweet and mild. This happens to be one of my family favorites. The kids always love this one so it makes a nice dinner.

2. Chicken Soup

You can never go past a delicious clear and clean eating soup and this recipe is supaer easy!

3. Anti-pasto Crockpot Chicken

This one is based on some Mediterranean flavors and can be eaten on a bed of greens like I served it here or with some brown rice for something more hearty. And a sprinkle of cheese also makes a nice touch.

I know you’ll enjoy these. They take 5 minutes to prepare and then just set them and forget them.
