Ingredients
- 150 g (5.2 oz) beef – diced finely
- 1 onion – diced
- 2 carrots – diced
- 400 g (14 oz) tin mixed beans – liquid drained
- 200 g (7 oz) tinned diced tomatoes (half a 400g (14oz) tin)
- 1 teaspoon cumin
- ½ teaspoon garam marsala
- 1 teaspoon chili paste (sambal oelek)
- ¼ cup water
- oil for cooking
- brown rice to serve – 1/2 cup per serving
Instructions
- Heat oil in a pan over high heat
- Add beef, ½ teaspoon chili and ½ teaspoon cumin, fry for 1 minute then set aside in a bowl. It will looked a little uncooked, that’s fine.
- Add a bit more oil to the pan, add onions and carrots and saute until onions are browning
- Add the beans to the pan, along with the remaining spices (1/2 teaspoon chili, ½ teaspoon cumin, ½ teaspoon garam marsala
- Stir to combine, then add the tomatoes to the pan, stir and let simmer for a couple of minutes
- Add water if it is too dry and trun the heat down while simmering for 2-3 minutes
- Before serving add the beef back into the pan
- Serve over brown rice or a bed of lettuce if prefered
