Greek Yogurt Cucumber Salad

This greek yogurt cucumber salad is super dooper easy and makes a great side dish to a spicy meal. We ate it with a spicy lentil dish for lunch and then had the leftovers the next night on top of some potatoes.

Greek Yogurt Cucumber Salad Recipe

Ingredients
  • 1 lebanese cucumber – diced
  • 1/2 teaspoon baby capers – chopped up
  • 1/2 cup yogurt
  • pepper
Instructions
  1. Mix all together and serve with a spicy dish or on top of potatoes

Here’s what we ate it with for lunch, an amazing lentil curry feast. Take a coconut flour flat bread, top it with some lentil curry, beet greens and a little greek yogurt cucumber salad. Delicious!!
