Absolutely you can eat beetroot leaves!
And they happen to be super tasty and delicious and loaded with nutrition too.
I actually discovered that my husband loves sauteed beet leaves. There’s a super easy recipe over here that you might like to try.
They aren’t something most people eat wouldn’t you agree? I know for many years I threw them in the bin or compost myself. I always thought you could only eat the beets themselves, you might have thought that too?!
But you can use them just the same way you would use spinach or any other leafy greens.

- Make a spinach and feta pie or roll
- Use it in a breakfast frittata
- Make sauteed beet greens – delicious!
- Chop it very finely and add some to a salad
- Add it to soups, stews and casseroles

Below is the nutrition data for boiled or sauteed beetroot leaves. As you can see there are the nutrients lists for 100g, 1 cup and half a cup.

Like most greens these beet greens have lots of calcium, potassium, vitamin C, folate, vitamin K & A, amongst others. As you can see from the nutrient list they actually deliver a large amount of nutrients for our body to use.
I know I’ll definitely be using my beet greens every time I buy them. They aren’t ending up in the compost bin anymore that’s for sure ![]()
