Healthy Chicken Burrito Recipe


I’ve got a super healthy chicken burrito recipe for you today. It’s sugar free, dairy free, gluten free and delicious! So satisfying it will want you coming back for more :)

Chicken Burrito Recipe

Serves: 3-4
Ingredients
  • 500g/ 1.1lb chicken thighs – diced
  • 1 onion – diced
  • 1 teaspoon dried cumin
  • 1 teaspoon dried garam marsala
  • 1/2 teaspoon dried chili flakes
  • 1 tin diced tomatoes
  • 1/4 teaspoon dried basil
  • Olive oil, coconut oil or ghee
  • 1 carrot – grated
  • 1 zucchini/courgette – grated
  • 1 yellow or red bell pepper – sliced
  • Iceberg lettuce leaves
Instructions
  1. Place diced tomatoes & dried basil in a small pan & simmer to cook, stirring occasionally
  2. Heat a small amount of oil in a large fry pan or wok
  3. Add onion and cook until browning, then add spices to the onion to release the aromas
  4. Remove onion and spice mix from pan into a bowl & set aside
  5. Heat more oil in the pan until hot
  6. Add diced chicken & cook until just browning about 3-4 minutes
  7. Add onion spice mix back to the pan & cook until the chicken is just cooked and tender
  8. Turn off the pan & allow to rest for a few minutes while you prepare the grated & sliced vegetables
  9. Carefully remove lettuce leaves from the base of the lettuce so the leaves remain whole
  10. Serve the sauce and chicken into bowls & the salad vegetables onto a plate
  11. Dig in and get your hands dirty by layering your ingredients into a healthy burrito. YUM!
