Breakfast Frittata Recipe

Breakfast FrittataMaking a breakfast frittata is one of my favourite things to do. The thing about frittata’s is they are easy, you can throw any kind of veggie, leftovers, or different meats into them, and they always seems to taste good.

This recipe is for a vegetable frittata but like I said, mix it up and include whatever you like. Eggs are the key ingredient, so as long as you have those to go over the top you’re right :)

 Eggs are full of quality protein, choline, and vitamin D. Kale is one of the most nutritious green leafy vegetables we can eat. And this meal gives you sustainable energy until lunch time.

Breakfast Frittata Recipe

  • Serves: 2-3
  • Prep Time: 5 min
  • Cook Time: 10-15 min

Ingredients

  • 1/2 onion – sliced
  • 1 cup cauliflower – chopped
  • 1 large carrot – julienne sliced (or use 2 small ones)
  • 1/2 red bell pepper (capsicum)
  • 2 kale leaves – chopped finely (approx. 1 cup)
  • 2 small tomatoes – sliced (or 1 large one)
  • 5 eggs
  • cracked black pepper
  • oil for cooking

Cooking Instructions

  1. Heat oil in a pan
  2. Add your onion, cauliflower and carrot and cook over a medium/high until nice and brown and softening, and be sure to stir occasionally. Sometimes you have to add a bit of water to prevent sticking and burning.
  3. Add the bell pepper and kale, turn down the heat to medium/low and let cook for a further 3-5 minutes, stirring occasionally
  4. Meanwhile, crack the eggs into a bowl and beat them well, adding a generous amount of black pepper to the mix
  5. Level out the ingredients in the pan
  6. Top with the sliced tomato
  7. Pour the egg evenly over the top and cook on medium/low for 3-5 minutes
  8. Heat the grill (broiler) and when you think the bottom is cooked enough, place the pan under the grill (broiler) for 3-5 minutes until the top is cooked and golden brown
  9. You can slice the frittata in the pan but I often remove it and place it on a board for cutting. To remove the frittata, put your spatula around the edges to loosen it, then gently tilt the pan and use the spatula to guide it onto the board.
  10. Slice it up and serve. Add a little grated cheese on top if you like cheese, and it also tastes great topped with sliced avocado :)
