Today I’ve got an Adzuki Bean Recipe to share. The picture really doesn’t do it any justice in the pot like that. And when I made it I had every intention of taking more elegant photos. But due to the fact that I was busy and the adzuki bean chilli was so delicious, the photos never happened and the chilli was all gone….
So you’ll have to believe me when I say this was super yum. Serve it on top of some brown rice, on a bed of crispy lettuce, or even on crackers and it will delight either way. It does take a while to prepare but is well worth the effort so I hope you cook it up and enjoy it.

Chilli Adzuki Bean Recipe
Ingredients
- 2 cups pre soaked and cooked adzuki beans – dont know how, read my instructions here
1 large onion – deiced
1 red capsicum – diced
2 carrots – halved and roughly chopped
2 tablespoons tomato paste
1 tin diced tomatoes
1 bottle beer – sounds strange but adds a great flavour
1 tablespoon unsweetened cocoa powder
1.5 cups stock or water
Oil for cooking
The spice mix
Mix all the following spices together in a small bowl or container, ready to add to the dish
- 1 teaspoon cummin
1 tablespoon sweet paprika
1/2 teaspoon dried oregano or thyme
1 teaspoon dried chilli flakes
Cooking method
1. Add oil to the pan and sauté onion until brown, then add capsicum, carrot, and spice mix to the pan, mix it all together to allow aromas of spices to blend and cook off slightly
2. Add the tomato paste into the pan and a little bit of water if it’s sticking, and then cook the tomato paste and spice mixture until the tomato paste is a deep red
3. Add the whole beer into the pan and let it simmer down for 3 minutes to reduce liquid and remove alcohol
4. Add the adzuki beans to the pan, along with the tomatoes, cocoa powder, and stock, then stir it all together until well combined
5. Simmer on very low heat for 1 to 1.5 hours until the sauce reduces and the adzuki beans and vegetables are soft and tasty. Add alittle more water during cooking process if necessary.
Serve it on a bed of rice, on some crispy shredded lettuce, on some crackers or even with some steamed vegetables.
