One of the most frequently asked questions I get is how to cook kale, so I’ve collected some great recipes from my food blogger friends, along with recipes from Good Food Eating. Give them a try and enjoy 
Shiitake, Kale & White Bean Soup with Parsley-Butter Rice
Bacon, Apple & Kale Quiche Cups
Slow cooked lamb shanks with kale
And kale in salad is great because it retains all of the amazing antioxidant power.
The secret to adding kale to a salad is to massage the dressing onto the salad in order for the leaves to be softer and not as spiky.
Here’s some other ideas for using kale:
- Inlcude it in a green smoothie
- Add it to tabouli instead of parsley
- Use a little in a homemade pesto
Great kale tip if you are eating it cooked- simmer it in stock for 5 minutes or so and then quickly cool- this helps to make it less bitter.
