Delicious Kale Recipes

One of the most frequently asked questions I get is how to cook kale, so I’ve collected some great recipes from my food blogger friends, along with recipes from Good Food Eating. Give them a try and enjoy :)

Citrus Kale Couscous Salad

Kale and Pumpkin Seed Pesto

Shiitake, Kale & White Bean Soup with Parsley-Butter Rice

Nacho Kale Chips

Bacon, Apple & Kale Quiche Cups

Slow cooked lamb shanks with kale

Green superfood soup

Kale salad

And kale in salad is great because it retains all of the amazing antioxidant power.

The secret to adding kale to a salad is to massage the dressing onto the salad in order for the leaves to be softer and not as spiky.

Here’s some other ideas for using kale:

  • Inlcude it in a green smoothie
  • Add it to tabouli instead of parsley
  • Use a little in a homemade pesto

Great kale tip if you are eating it cooked- simmer it in stock for 5 minutes or so and then quickly cool- this helps to make it less bitter.
