Homemade Pizza Recipe & Tutorial

Pizza is not an everyday affair in our house but my husband was hassling me for it recently so instead of just buying some gluten free flat bread or a gluten free base I decided to attempt to make my own gluten free pizza bases.

This was my first attempt and the recipe does need a little work. Sometimes you just don’t quite get it right :)

Still I thought I’d share it with you anyway, and then I’ll share an update with the tweaked crust recipe in a future post.

The good news is that although it wasn’t really what I’d call a major success, it was all still eaten apart from 1 slice and some of the base of the gourmet chicken one, it was just a bit soggy in the middle.

That means it couldn’t have been all bad because if my husband really doesn’t like a new recipe, he definitely let’s me know and he sure doesn’t eat it :)

I enjoyed them, and with a few tweaks they will be even better.

The Gluten Free Pizza Base

This is not a pizza base that needs to be kneaded and rolled out and is really fairly simple. It still takes more time than just buying a base but if you have the time, it’s always fun.

Makes 2 medium pizzas

Ingredients

  • 1/2 cup almond meal
  • 1/2 cup flax meal – ground flaxseed
  • 1 cup buckwheat flour
  • 1 cup brown rice flour
  • 3 teaspoons baking powder – I’d change this to less next time so it’s crispier
  • 1/4 teaspoon sea salt
  • 2 cups water

Method

  • Put all the ingredients into a large mixing bowl
  • Mix well with a spoon or whisk and let sit for 10-15 minutes
  • Preheat oven to 200°C (390°F)
  • Put some sheets of baking paper onto 2 large trays
  • Gently tip the pizza dough mix onto the baking paper, it’s quite runny so make a mound in the centre
  • Next get a wooden spoon or spatula and gently spread the mixture evenly from the centre, working your way out so you end up with 2 flatish bases on the baking paper
  • Cook for 15-20 minutes – I only cooked it for 10 minutes this time and I just don’t think it was enough because they were still a bit soggy in the middle, so that’s one thing I will change next time

After I cooked it and before adding the topping it looked like the picture below. I would definitely leave it to brown more before adding the topping next time. I think giving it that extra 5-10 minutes in the oven will fix the soggy centre.

Pizza Toppings

I made 2 different pizzas, a beef and pineapple pizza (pictured above), and a gourmet chicken pizza (pictured below).

The tomato sauce for both pizzas

  • 2 fresh tomatoes
  • 1 teaspoon mixed herbs

Blend up in the food processor

I would probably change this and just use tomato paste next time, it will give a deeper flavour and the base probably won’t go as soggy.

Beef and Pineapple Pizza Topping

Ingredients

  • 200g (7oz) ground beef mince
  • 1/2 red onion – sliced
  • 1/2 red bell pepper (capsicum) – halved and sliced
  • 1/2 teaspoon chili paste (sambal oelek)
  • 1/2 cup diced pineapple
  • Oil for cooking

Preparing the beef pizza ingredients

  • Heat a pan over high heat
  • Throw in the beef and onion
  • Cook for about 3-5 minutes until beef is browned off
  • Add the chili and mix through
  • Then set aside in a bowl ready to go

Gourmet chicken pizza

Gourmet Chicken Pizza Topping

Ingredients

  • 250g (8.8oz) chicken breast – diced pretty small
  • 65g (2oz) fetta cheese – diced
  • 10 olives – sliced
  • 1 cup baby spinach
  • oil for cooking

Prep for the chicken

After I cooked the beef and set it aside in a bowl I just put a bit more oil into the pan and browned off the chicken for just a few minutes. It was still a bit pink and that’s fine, you don’t want to overcook it because it cooks in the oven too :)

Set this aside in a bowl too.

Finally you’ll need 130-150g (4.5-5.2oz) grated cheese to go on top.

Tips for preparation

Get all your preparation and ingredients ready to go and set aside waiting for the pizza assembly. This makes it quicker and easier to put them together and it also saves you from running around like a silly person not knowing what’s what :)

Also, if you want to make just one of the toppings, double the ingredients and just do that, this will also cut down your time and preparation a bit.

Topping Your Pizzas

Next you’ll want to top the pizzas, start with the tomato sauce or tomato paste, then assemble each one.

  • For the beef one, add the beef mixture, red bell pepper (capsium), pineapple and top with cheese.
  • For the chicken one, add the chicken, the olives and fetta, then the spinach and cheese

Bake for 20-30 minutes at 200°C (390°F) until nicely browned with crispy edges

Slice up and enjoy :)

Making pizza is definitely a task but you must agree they are super tasty, which is why we like eating them right?
