How To Make Cauliflower Rice

I love to eat brown rice sometimes but it’s also great to have alternatives in order to add variety and keep the carbohydrate intake under control. Cauliflower rice makes the perfect substitute for gluggy, carb filled rice. And you will be pleasantly surprised at just how good it is!

My husband was so sceptical when we first had this, he thought it was a stupid idea but he had to eat his words because he actually liked it and was surprised that you couldn’t really tell the difference.

Grated cauliflower has a similar texture to rice and you can cook it in the basic way such as in this recipe, or try adding different flavours or some onion to the rice while cooking. This way you can come up with lots of varieties to try. The cauliflower rice is also great to use in a cauliflower fried rice recipe too.

And as you can see in the image below, that beef goulash is actually served on a bed of cauliflower rice. Looks great doesn’t it?

 Cauliflower Rice

 Ingredients

  • Approximatly 1/4 cauliflower per person – grated
  • Oil for cooking
Instructions
  1. Heat oil in a pan
  2. Add cauliflower and fry up until it’s browned and cooked through, stirring it occasionally throughout the cooking process
  3. Serve it as a bed for your favorite dishes, it’s as easy as that!

OPTIONS

Storage – will keep in the fridge for 2 days so you can cook a bigger batch for a few meals

Additions – Add some finely diced onion for a slightly different flavor, cook the onion first for a few minutes before addin gthe cauliflower to the pan

Time Saving Tip – Grate the cauliflower by putting it through the food processor grater
