This recipe is the creation of Lisa Nay, one of my Best You Bootcamp members.
It’s a super easy chicken soup recipe made in a 10L pressure cooker, one to keep handy for those super busy evenings when you really don’t feel like cooking.

- 1 x organic chicken (about 1.5kg)
- 3 x medium onions peeled and quartered
- 3 x medium carrots ends cut off, washed and roughly cut into big chunks
- 1/2 cauliflower cut up roughly
- 4 x cans of organic diced tomatoes
- 4 x tablespoons Moroccan spice blend
- enough water to ensure chicken is covered
- pressure cooker should not be more than 1/2 full
- Close pressure cooker
- Add medium/high flame until you reach pressure
- When yellow button pops up the pressure inside is at the right temp. to start timing
- Reduce the heat
- Cook at high pressure (setting two) for 15-20 minutes
- Turn off flame
- Allow to depressurise naturally – usually takes around an extra 20 minutes
- Be careful on opening pressure cooker that lid is faced away from you so the steam is away from you
- Remove chicken – it will be falling off the carcass – Bin all skin and bones. Flesh can be separated by hand easily, it just falls apart. Put the flesh back in with the rest of the soup
- Add salt and pepper to taste
