This is an awesome healthy snack recipe.
Instead of using crackers, use fresh cucumber rounds instead. They contain way more nutrients in the way of vitamins and minerals, less carbs (good for weight loss or a detox), and they are amazingly refreshing and satisfaying too.
Cucumber Nutrition Facts: Half cup slices: Calories (Energy): 8g Fat: 0.06g Carbohydrate: 1.89g Fiber: 0.3g Sugar: 0.87g Protein: 0.34g.
I’ve used avocado, fresh tomato slices, sundried tomatoes, hummus, flaked almonds and sprouts in the picture below, but you can really use anything for the toppings and it makes it interesting if you change it up.

Ingredients
- 8 slices cucumber
- 40 g/ 1.4 oz cheddar cheese – sliced
- 8 stuffed green olives – halved
- 4 sundried tomatoes
- Fresh tomato slices
- hummus
- tomato
- sprouts
- flaked almonds
Instructions
- Use the cucumber slices as a base and layer the cheese and olives on some of them, and cheese, hummus and sundried tomatoes on the others. Use whatever you have on hand.
