I have Alpha-Gal, the red meat allergy from a tick bite. It is an IgE reaction to a carbohydrate found in most mammals. It causes a delayed anaphylactic reaction. I have reacted 8 hours after I have consumed any mammalian meat. I am one of thousands so far, we really don’t know how many of us are out there and we are world wide. https://www.facebook.com/groups/alphagal/ Is the support group I had started. Just last year at this time we had 700 members and know we have 1780. Some of us manage quite well and some are very challenged with out tolerances. Dr’s do not have a clue about this and seem to think ingestion is the only way we can react and its just not true as I have just read in your article. Thank you, Tina
